Sautéed Snap Peas | Fertility Naturopath
Snap peas are going nuts in my garden right now. In fact, they are climbing up over the fence and into my neighbour's tree! The kiddos and I are happy to eat them straight off the vine, but they are also a delish veggie side dish to pair with your dinnertime protein. Here's how...
Ingredients:
1 lb (about 4 cups) sugar snap peas
2 Tbsp avocado oil
3 cloves of garlic, minced
1/2 tsp sea salt
¼ tsp freshly ground pepper
1 Tbsp fresh mint, chopped
Juice of 1/2 lemon
Method:
Prepare the snap peas by removing the stem and string.
Heat avocado oil in a large skillet over medium heat until warm. I rotate the pan to make sure the oil has thinned out to know it’s hot enough.
Add snap peas. Toss to coat with oil.
Now add garlic, salt, and pepper. Sauté until the peas are bright green and tender.
You want to keep them crisp.
Remove from heat. Top with lemon juice and fresh mint.
Serve and enjoy!
