Dr. Rachel’s Homemade Chicken Noodle Soup | Fertility Naturopath
I take pride is soup making as a family tradition passed on from the incredible women in my family - my Oma, my mother and now me.
Please enjoy this yummy, warming recipe from my family to yours.
Ingredients:
2 Tbsp olive oil
3 shallots, diced
2 cloves garlic, minced
2 carrots, peeled and diced
2 chicken breasts, cubed - you can also use chicken pulled off the bone from a roasted chicken
6 cups chicken broth
1/2 tsp sage
1/2 tsp thyme
1 tsp parsley
4 cups spinach
1 cup noodles of your choice
Salt and pepper to taste
Method:
Heat olive oil over medium heat in a large soup pot.
When it’s shimmering, add in shallots and sauté under translucent.
Add garlic and saute for 1 minute until fragrant.
Now add in your chicken. Heat until cooked through and no longer pink.
Add in carrots and cover with stock.
Top with spices and stir to combine.
Bring to a boil and then reduce heat to low and let simmer for 30 minutes.
While you’re waiting you can bring a pot of water to a boil and cook your noodles as per the package directions. Drain and set aside. I always cook my noodles separately and add them in at the end so they do not become soggy.
Once the soup has simmered, you can now add in your noodles and spinach.
Season with salt and pepper and serve.
